Weekends are the best, aren’t they? Now that we are a family of 3, Theron & I have been trying to protect weekends for family time. We aren’t always good at it… both of us have a long history of not being able to tell people no. But… we are getting better 🙂
I’m not sure if this change in mindset is to blame, but recently, Theron has been waking up every Saturday and Sunday, sleepy eyed and saying, “I want pancakes!” Every weekend folks. No joke. The guy doesn’t even open his eyes before those words escape.
Because of this pancake addiction (and my commitment to having a healthy family) we’ve had to get a little creative. Restaurant style “put you in a coma” pancakes just don’t fly around my house.
So instead, we make these. They look just like regular pancakes. And taste just like regular pancakes, but they are far healthier. And quick to make!
Quick disclaimer, I can’t stake claims to the mix recipe- this is store bought. I have other healthy homemade pancake recipes to share, but they take a bit longer to whip up! In any case, I highly recommend this store bought mix and pure maple syrup combo for a quick, easy, health(ier) breakfast! - Mix desired amount of Kodiak Pancake Mix with water (or milk for more protein)
- Add Coconut Oil to griddle to melt
- Add spoonfuls of batter to griddle (you should be able to make about 6 pancakes at a time)
- Flip once they begin to bubble
- Cook to warm, golden brown
- Remove from griddle
- Add Pure Maple Syrup
- Add Walnuts, if desired
