Couscous & Veggie Salad

Looking for a quick, easy, all natural dinner idea? This is what was served at my table a few weeks back :) Give it a try!

Couscous & Veggie Salad

Ingredients

  • 1 cup raw couscous
  • 1/2 cup carrots chopped
  • 1 cup bell peppers chopped
  • 1/2 whole zuccini chopped/sliced
  • 1 1/2 cup vegetable broth
  • 1/2 tsp basil
  • 1/2 tsp organic garlic salt or fresh garlic
  • 1/2 tsp ground pepper
  • squirt hot chili sauce optional

Instructions

  1. Saute carrots and peppers for 5-6 minutes
  2. Add in zucchini and all spices/hot sauce, stir 1 minute
  3. Add in broth and couscous, bring to a boil
  4. Remove from heat and cover; let stand 5-8 minutes; stir and fluff
  5. Good hot or cold
